His new butcher's shop, Simon's Gourmet Meats, opens today in Springett's Arcade after years of cutting out his own career path.
He's a regular face behind the counter, having worked since the age of 18 in a Highlands butcher shop before branching out and opening his own butchers of fine meats.
"I've done it since I left school," Mr Pyne said.
"They're long hours being a butcher, but I found it very rewarding over the years.
Even after, so many years in the business, the father of three said his butchery would be a long-term plan that might see his boys become butchers one day.
"They might want to become butchers, you never know," he said.
"But it's always been a dream of mine to open my own shop."
Mr Pyne said regular shoppers of Springett's Arcade could expect a fresh and modern shop full of the freshest meats, aged meats, an array of sausages and even fresh honey from his father's local farm.
Mr Pyne's wife, Kelly, said customers would get "old-fashioned service and great quality meets".
The shop opens today for business in Springett's Arcade and will operate Monday to Friday from 7am-5.30pm, Saturday from 7am-4pm and Sunday from 10am-2pm.
